Delicious Chocolate Marquise Recipe

In Venezuela (where I am from), marquises are a really common dessert, we even have small shops that focus on selling just marquises of all different kind of flavours. I remember that when I was a kid, there was a place where my mom used to take me sometimes to get marquises and it was such a happy and exciting moment for me because there were so many flavours and combinations to choose from, my favourite was always chocolate or cookies and cream. 

 

Yesterday I was thinking about making something that reminded me of my childhood, and the first thing that came to my mind was the marquise!

Ingredients

  • Servings: About 12 – 15 (depending on size)

 

  • 2 ½ Cups milk (You can use any milk of your preference, I used cow milk)
  • 1/2 Cup butter
  • 1 Can condensed milk
  • 60 Biscuits (I used Maria Cookies or Galletas Maria)
  • 200 g Dark Chocolate 75 – 80%
  • 1/2 Cup Hazelnut (Crushed or made powder) – Optional
  • 20 gr Grated dark chocolate
  • Chocolate chips
  • Cake mould

Directions

  1. In a bowl add: 1 cup of milk (reserve the rest in a bowl to soak the cookies later on), butter, 200 g chocolate, and condensed milk and melt in bain-marie. 

2.  Grate your 20 g of chocolate and put it aside

3. Once the chocolate mixture is melted, pass it to a medium pot and cook at medium fire until the consistency is as shown below (ganache) Tip: Keep constantly whisking gently until it gets the ganache’s consistency we are looking for.

3. Prepare a bowl with cold water and a few ice cubes (not many)

4. Once the ganache is ready, get it off the stove and cool it down by placing the pot for 2 minutes in the bowl with iced water (keep whisking)

5. Get your cake mould ready.

6. Start soaking each biscuit for just 2 seconds in the milk and start placing one by one on the base of you cake mould until you cover almost everything and make a beautiful bed of biscuits. Tip: You can break the biscuits to fit in smaller places.

7. Place some ganache on top until all biscuits are covered with it.

8. Add some hazelnut on top (Optional, you can do it without it)

9. And repeat the whole process until you get to the top. Just remember that your last layer should be ganache.

10. Top your marquise with the grated chocolate and chocolate chips.

11. Once your marquise is ready, place it in the fridge for about 1 hour or more, and then it’s ready to be eaten!
